Assuming I can't take the easy route and go with a live album (which would either be Maiden England '88 or Rock In Rio), AMOLAD is a pretty solid candidate due to it being Maiden's most consistent front-to-back release. Might have to go with Seventh Son Of A Seventh Son, but there's really no good options here since you're forced to leave so much essential stuff on the table regardless of your choice.

The unquestionable best starting place is their first album, Fresh Fruit For Rotting Vegetables. Like most music, its best listened to as an album, but if you need to pick and choose a couple of songs, try Kill The Poor, Let's Lynch The Landlord and Holiday In Cambodia to quickly get an idea of what they're like. I would go to Give Me Convenience Or Give Me Death after that.

The stats and basic reason says the answer is Spirit Crusher; it was the song that got me into them, it remains my most scrobbled Death song, and both musically and lyrically is utterly outstanding. If I were to sit down with the discography and try to come up with a more objective answer, it would probably end up being Without Judgement due to the sheer mastery of musical theory that's on display in that one's composition. How about yourself?

Their body of work is a pretty linear gradient from straight up death metal towards a more technical and progressive approach, so starting in the middle of the catalogue is a good choice. You can find which elements really do it for you and move forward or backwards based on that.
