His playing from Living Legend until his death is truly incredible. His early stuff is great too of course but after everything he went through, it really shows in his music of that later period. Not to mention the developments in jazz from that time. He lived through west coast swing and Young, to bebop and Bird, to modal and post-bop with Coltrane, avant-garde with Ornette and Ayler (and Trane), the 70s "death of jazz", until the early 80s and maintained and developed his own style. Complete Galaxy Recordings is worth listening to in full.

For a great read, check out Art's autobiography 'Straight Life'. Charlie Parker, eat your heart out. Art Pepper is the best jazz alto player ever.
