In 1991, director Jon Avnet and the producers of "Fried Green Tomatoes" asked Grayson Hugh to record his version of Bob Dylan's "I'll Remember You" for the end-title song to the film. Grayson drew on his experience as a young man playing the piano in a gospel church and arranged Dylan's song in that style. For the recording, Hugh used a gospel choir and members of Eric Clapton's touring ensemble as his backup band. Hugh sang and played Hammond B3 organ on the track.
